1 lb purple potatoes (unpeeled and cut into strips)
2 1/2 tbsp olive oil
1 1/2 tsp sea salt
1 tsp sugar (to taste)
2 tsp smoked sweet paprika (to taste)
1/2 tsp black pepper (or not)
1/2 tsp ground garlic (or not)
Heat oven to 375°F.
Cut the potatoes evenly into strips.
Roast: Coat the potato in oil. Spread the coated potatoes into a single layer on an ungreased baking sheet. Roast 15 minutes, then flip and roast another 5 to 10 minutes until potatoes develop a crispy exterior.
