Naturally good for you and organic, crispy oven-roasted purple fries, beats out sweet potatoes fries and french fries. This is a big winner with kids and foodies. 1 lb purple potatoes (unpeeled and cut into strips)
2 1/2 tbsp olive oil
1 1/2 tsp sea salt
1 tsp sugar (to taste)
2 tsp smoked sweet paprika (to taste)
1/2 tsp black pepper (or not)
1/2 tsp ground garlic (or not)
Heat oven to 375°F.
Cut the potatoes evenly into strips
Roast: Coat the potato in oil. Spread the coated potatoes out into a single layer on an ungreased baking sheet. Roast 15 minutes then flip and roast another 5 to 10 minutes until potatoes develop crispy exterior.
After cooling off, now season- combine spice ingredients mixing well.
